Beyond Flavours: Apéritif Bali x Alice at The Langham, Jakarta
On 11 and 12 April 2025, one of Bali’s most renowned fine dining destinations, Apéritif Restaurant Bali, descends upon the capital to collaborate with Alice at The Langham Jakarta. Discerning diners in the city will be given the rare opportunity of savouring Apéritif’s signature Lunch and Dinner menus, as well as a special cocktail menu.
‘Borderless Food’ is the philosophy of Apéritif’s Executive Chef, Nic Vanderbeeken, known for his progressive approach of fusing Indonesian ingredients and flavours into a European-style dining experience. Recognisable flavours are brought into new context through each dish, artistically and impeccably presented ––this has been a winning formula since Apéritif opened its doors in Ubud, and also secured the Belgian chef the title of Travel + Leisure’s ‘Tastemaker 2024’ award.
Now, Chef Nic brings his menus to Jakarta for the first time, inviting diners to the sophisticated ALICE at The Langham, Jakarta, presenting Lunch and Dinner tasting menus, plus selected a la carte options.
Some highlights include ‘Oyster’, delicated paired with smoked oyster creme, kemangi and dabu-dabu; ‘Scallop’, presented in a refined clam chowder with chive oil and sambal mango. ‘Hamachi’, cured and complemented by pomegranate, rica-rica and daikon; to ‘Wagyu Beef’, slow-cooked with sweet potato curry and a kalio sauce’. Experience Indonesian flavour profiles like never before.
Joining Chef Nic is masterful mixologist Panji Wisrawan from Apéritif’s adjoining venue, Pinstripe Bar. This award-winning cocktail creator brings five of his signature cocktails to both Alice Bar (11 April) and Artesian Bar (12 April), with specialties like the ‘Tirtha Aperitivo’ (Karusotju 18, vodka, pandan, and floral soda) to ‘The Night Shade Negroni’ (Negroni-twist with tamarillo, balsamic strawberry, and cold brew).
