Stepping into the role alongside Chef Ryan Kim, Chef Brendon Chen brings a soulful approach to the dining room, blending the precision of Michelin-starred training with the nostalgic, home-cooked flavors of his Chinese heritage.
Chef Brendon’s culinary identity was shaped long before his professional career began, rooted in the time spent watching his mother and grandmother in their family kitchen. While he mastered his technical skills at Le Cordon Bleu London, his cooking remains inspired by the simple, aromatic memories of simmering broths and fresh ginger. For Chef Brendon, the goal is to ensure every dish feels thoughtful and deeply personal.



His path to SU MA includes a decade of experience at some of the most respected restaurants in Europe and Asia, including Restaurant du Vieux Pont in France and MUME in Taipei. These years refined his belief that modern techniques should be used to celebrate, rather than overshadow, a chef’s roots. Chef Brendon further established his reputation by founding Playte in Kuala Lumpur, a venture that earned a recognized spot in the Michelin Guide.
Now at SU MA, Chef Brendon Chen and Chef Ryan Kim are collaborating on a menu that explores the shared traditions of Chinese and Korean cuisine. Their work focuses on seasonal ingredients and the patient art of fermentation, leaning into a philosophy of balance and restraint.
