
‘A Taste of Bangkok‘ arrived at Four Seasons Hotel Jakarta earlier this month, giving diners the opportunity to experience dishes from Chao Phraya Terrace at Four Seasons Hotel Bangkok without leaving the city. Held at Palm Court, the limited-time collaboration brought the flavours of the Thai capital to Jakarta through a menu created by the Bangkok restaurant’s culinary team.
The collaboration offered a glimpse into the dining experience of the Bangkok restaurant, which overlooks the Chao Phraya River and has built a reputation around seasonal ingredients, traditional charcoal grilling, and recipes shaped by Thailand’s diverse regional influences. Instead of focusing on familiar Thai staples alone, the visiting chefs introduced dishes that reflected the approach and personality of their home kitchen.



Leading the team was Chef de Cuisine Jessada Khruapunt, joined by Chef de Partie Sirinya Chutiwan and Commis Chef Natthapon Panyachai. The chefs curated a selection of dishes ranging from familiar favourites to more contemporary creations. Guests could begin with Tom Yum seafood prepared with the daily catch before moving on to slow-cooked Massaman beef cheek curry with potatoes and pickled shallots. Another standout was the grilled squid paired with spicy wing bean salad and Thai macadamia seafood sauce, highlighting the restaurant’s affinity for charcoal grilling.
Dessert brought a mix of comfort and contrast. While mango sticky rice remained a crowd favourite, the combination of calamansi granita and white chocolate panna cotta offered a lighter finish to the meal. Available alongside Palm Court’s regular menu, the special selections started from IDR 110,000++.
“At Chao Phraya Terrace, our cuisine is inspired by the richness of Thailand’s culinary heritage and the vibrancy of its local ingredients,” said Chef Jessada Khruapunt. “Bringing these flavours to Jakarta was an opportunity to share that story beyond borders while creating something memorable in a new setting.”
Although the chefs were only in residence from June 8 to 12, selected dishes remain available at Palm Court until 30 June, extending the collaboration beyond the initial residency. The Bangkok showcase also marked the debut of Flavors Without Borders, a new initiative by Four Seasons Hotel Jakarta that will continue to introduce guest chefs and culinary concepts from different destinations.
