Indonesia is welcoming a global culinary legend for the very first time, as Pierre Hermé—the visionary dubbed the “Picasso of Pastry”—makes his grand debut and instantly gives the city a brilliant new place to gather.

The space feels more like a stylish design studio than a regular bakery. They’ve completely swapped out the old, cold pastry counters for sleek, low glass displays and an open central island, which gets rid of the wall between guests and the makers. It naturally makes people want to lean in and appreciate each dessert like a piece of art. To ensure every single bite lives up to the legendary name, the entire on-site production is overseen by Chef Ludovic Audaux, a seasoned luxury hospitality professional and a celebrated medalist from the Pastry Chef of the Year competition at Hotel Olympia London.

While Pierre Hermé brought his most famous Parisian hits along for the ride, the real talking point is Héméra, a tropical masterpiece created exclusively for Indonesia. It pairs a rich, fragrant coconut shortbread and soft sponge with a bright, punchy mango and passion fruit compote, all smoothed out by a velvety, nostalgic pandan cream.

The rest of the display case feels like a curated gallery of his greatest hits. There’s the Infiniment Vanille, which honours local terroir by folding premium Indonesian vanilla into a rich mascarpone, and the Plaisir Sucré—a chocolate lover’s dream that stacks hazelnut dacquoise with crispy milk chocolate wafers and velvet ganache. Then you have the legendary Ispahan, his famous, romantic blend of rose, raspberry, and lychee that is hard to pass up.
