
From its spot on the 65th floor, Artesian Bar Jakarta is changing how people think about cocktails with its latest menu, SLOW ROOTS. Debuting at The Langham Jakarta, the programme focuses on the connection between local farming and modern drinks. Driven by the idea that “what grows together pours together,” the menu transforms Indonesian seasonal produce into a series of sophisticated drinks.
The whole concept was dreamed up by Beverage Manager Andrea, who wanted to bring the global Slow Movement into the bar scene by skipping the usual superficial eco-trends and ensuring every detail has positive impact. The menu itself follows the lifecycle of a garden, split into four chapters that show off local flora. It starts with SOIL, featuring earthy ingredients, such as purple sweet potato, cassava, Javanese ginger, and beetroot. Next is SPROUT, which highlights green elements through moringa, pandan, lemongrass, and a sharp kick of andaliman pepper. After that, BLOOM introduces floral notes like mace, jasmine, frangipani, and local tea, before finishing with HARVEST; a celebration of tropical fruits like coconut, banana, durian, and jackfruit.



Behind the bar, the team balances unexpected flavour pairings to challenge conventional cocktails. The menu features creative additions, including Pandan & Parmesan Cream, MSG Giffard Crème de Cacao White, Satay Sauce Distillate, and Banana Skin Shrub. There are also playful nods to local culture, including a Tempe Martini, a Pie Susu Old Fashioned, a Pala Negroni, and a Kecombrang Margarita. To match the seasonal storytelling of the drinks, Indonesian artist Erianto created playful illustrations for the menu.
This thoughtful approach shapes the whole evening, from menus printed on textured organic paper to drinks resting on custom handmade coasters. The bar team even harvests moringa, pandan, and lemongrass directly from their own urban botanical garden up. For everything else, they turn to community partners, collaborating with Liberty Society, for instance, employs marginalised Indonesian women to craft those coasters from upcycled hotel coffee grounds.
They source premium produce from the fields of Kebun Mama Organic in Puncak and work closely with YUM Organic Farm in Cipanas, an estate that grew out of a local orphanage and now supports over 10,000 people. To back their mission, Artesian donates 1% of the proceeds from selected cocktails directly to YUM’s health and education programmes.
