
Silk Bistro is inviting diners to discover the vibrant flavours and culture of Vietnam through Chef’s Day Out: Vietnam Edition, a limited-time dining experience inspired by chefs Freddie Salim and Kartika Chandra’s five-day culinary journey through Hanoi.
Created in collaboration with Roche Mazet, Silk Bistro’s wine partner, the seasonal menu explores a simple yet thoughtful idea: which Vietnamese dishes naturally pair with a glass of wine? The result is a collection of bold, comforting dishes that celebrate the essence of Hanoi’s street food while staying true to Silk Bistro’s contemporary, shareable dining philosophy.
“Hanoi felt honest,” said Chef Freddie Salim.“We wanted to walk, sit, observe, and eat the way locals do. Some of the best meals we had came from tiny corners of the city, on low plastic stools, surrounded by noise, movement, and people constantly passing by. There was something incredibly alive about it.”
During five days and four nights in Vietnam’s capital, the chefs immersed themselves in Hanoi’s bustling food scene, discovering not only its diverse culinary traditions but also the communal spirit that defines everyday dining. The city’s colourful streets, organised chaos and culture of sharing meals resonated strongly with Silk Bistro’s own approach, where dining is centred around bringing family and friends together.



The culinary journey has been transformed into a special menu available from 1 July to 16 August 2026 at both Silk Bistro Menteng and Silk Bistro Pakubuwono.
The menu begins with Bánh Mì, featuring house-made chicken liver pâté, smoked butter, pickles and potato crisps served in a crisp baguette, with a choice of lemongrass chicken, Wagyu beef à la Bò Lá Lốt or barbecue pork. Diners can also enjoy Bún Riêu, a comforting Vietnamese noodle soup with tomato and crab-infused broth, house-made fish cake, chicken and crab meatballs, fried cháo quẩy and vermicelli noodles.
For starters, Bánh Khọt presents turmeric-infused prawn mini pancakes served cuốn-style with nước chấm dipping sauce, while dessert comes in the form of Cà Phê Trứng Bun, Silk Bistro’s creative interpretation of Hanoi’s famous egg coffee, combining coffee custard, craquelin and roasted coconut crème anglaise. Guests can also complete the experience with Cà Phê Trứng, an indulgent espresso topped with roasted coconut crème anglaise.
Each dish has been thoughtfully designed to complement Roche Mazet’s selection of red and white wines, highlighting the natural harmony between Vietnamese flavours and wine pairing.
According to Debora Yuza, Marketing Representative of Silk Bistro, the inspiration extended well beyond the recipes.
“What stayed with us after Hanoi wasn’t just the food—it was the atmosphere. The closeness of people dining together and the strong sense of community found in everyday meals inspired us to create an experience that feels warm, familiar and immersive.” she shared



To further celebrate Vietnamese culture, Silk Bistro Pakubuwono will host a series of intimate art workshops inspired by the country’s artistic heritage.
On 25 July, illustrator Fildza Ayu will lead a Fan Painting Workshop, drawing inspiration from Vietnam’s tradition of hand-painted fans, which have long served as both practical objects and artistic canvases featuring landscapes, calligraphy and personal expression.
The following day, 26 July, artist Saturnus Reeks will conduct a Silk Painting Workshop, introducing participants to Vietnam’s centuries-old silk craftsmanship and renowned silk painting tradition. The session offers guests the opportunity to explore one of the country’s most celebrated artistic practices through hands-on creativity.
Supported by travel partners Bags City and LOJEL, Chef’s Day Out: Vietnam Edition reflects Silk Bistro’s ongoing commitment to storytelling through food, bringing together authentic flavours, cultural experiences and carefully curated wine pairings in a dining experience that transports guests from Jakarta to the heart of Hanoi.
