
There are few ingredients that make quite as much sense over an open flame as well-marbled beef. From 5 to 31 October 2026, COPA at 25hours Hotel Jakarta The Oddbird is putting that pairing to work with Fire & Wagyu, a month-long menu featuring Tajima Australian Grainfed Wagyu cooked over wood and charcoal and interpreted through the restaurant’s Latin American cooking.
Executive Chef Matias Mardones keeps the premise pleasantly focused, guests choose from a selection of Wagyu cuts, including Tajima Wagyu Striploin MB-9, Picanha MB 4–5 and Rump MB 4–5, each grilled over wood and charcoal. The beef is served with roasted onion, confit tomatoes and garlic confit, while Criolla, Chimichurri and Pebre provide three sauce options depending on how much extra sharpness, herbs or heat you fancy.
The menu gives the Wagyu several other forms to inhabit. Tajima Wagyu Tartare combines hand-cut beef with smoked egg yolk, roasted shallot, black garlic gel and pumpkin bread. Tajima Wagyu Tacos bring charcoal-grilled beef into homemade tortillas with guacamole, pico de gallo and habanero salsa, while the house-made Tajima Wagyu Longaniza pairs Wagyu beef and pork with confit tomatoes, garlic aioli and grilled sourdough.


The beef itself arrives with some pedigree behind the marbling. Tajima Australian Grainfed Wagyu has been produced in Australia since 2007 through a network of more than 60 farmers in Queensland, New South Wales, Victoria and South Australia. Cattle are selected at several stages and grain-fed for an average of 400 days on rations based on locally grown wheat, barley and oats. The programme is HGP-free and livestock-welfare certified, with production following halal and HACCP-certified standards and carcases independently assessed under the AUS-MEAT grading system.
At COPA, Mardones takes those characteristics in a distinctly Latin American direction, moving from straightforward grilled cuts to tacos, tartare and sausage while keeping wood and charcoal central to the menu.
