Head Chef and Co-Owner, Blake Thornley, has brought innovation and a real contemporary approach to Mozaic Ubud’s kitchen since it reopened back in December 2022, reinvigorating one of Bali’s pioneering fine dining destinations. Continuing the restaurant’s ethos of highlighting Indonesian ingredients and seasonal produce, presented through modern gastronomy, Chef Blake’s creativity in reimagining processes, flavours and textures has truly brought Mozaic back into the culinary limelight.

Whether its soaking pomelo skins to create vegan ‘lard’, freeze-drying tempe to create a ‘cereal’ or utilising an entire onion (even the skin!) in a zero-waste creation, the chef’s mastery in the kitchen has pleasantly surprised even the most travelled and experienced gourmands.

Available for one night only* (Saturday, 8 June 2024), Chef Blake Thornley takes over Lobo & Juno, the popular international restaurant of The Ritz-Carlton Jakarta, Mega Kuningan, serving up a lavish six-course set menu, plus an exquisite whisky tasting session by the restaurant. 

This exclusive dinner is priced at IDR 1,600,000++ per person.
