The evening begins with indulgence at the seafood on ice station, where Tiger Prawns and Slipper Lobster set the tone, followed by refined cold plates like Salmon Gravlax and Smoked Black Cod. Starters such as Stracciatella Cheese With Cherry Tomato Confit and Mediterranean Octopus & Chorizo Salad add bright notes before guests move into hearty courses.
Western highlights include Slow Roasted Australian Wagyu OP Rib and Mustard & Mint Roasted Lamb Leg, while the theatrical Parmesan Wheel Pasta becomes a centrepiece. Asian flavours bring spice and comfort with US Scallops & Tiger Prawn Green Curry and Garlic & Ginger Braised Angus Short Ribs. Desserts round off the feast with the Yuzu White Chocolate Dome, Salted Caramel Namelaka Tart, and Basque Burnt Cheesecake.
