As a part of the third edition of When Jakarta Meets Japan, Fairmont Jakarta invites guest chefs and mixologists to host a series of events to highlight Japan as this year destination theme.

The line up host includes Chef Tatsuya Sakamoto from SENSHU Restaurant, who will be serving an 8-course Japanese gastronomic menu at the hotel's dining destinations, VIEW.

Taking place from 18 to 22 September, the exquisite Japanese gourmet dinner experience will feature premium ingredients compelling patrons to appreciate dishes prepared with an elegant presentation. Chef Sakamoto is a Tokyo native who has been living in Indonesia for the last 15 years. His vast experience around the world include culinary centres like Osaka, Tokyo, Marina Del Rey, St. Thomas and Sao Paulo. His vast experience makes it easy for him to craft quality dishes for diners in Jakarta.

Opening the experience is the Cooked Horned Turban for starters, continued with a trio of Sweet Shrimp, Sea Urchin and Caviar. Chef Sakamoto presents Foie Gras Chawanmushi, which is a twisted traditional Japanese appetiser made from steamed silky smooth savoury soft egg custard delicately flavoured and packed with fillings.

Chef Sakamoto dedicates the fourth dish to celebrate the coming of autumn season by presenting the Kinmedai, Autumn Vegetables, Kinome Miso and Yuzu foam. The fifth course is the Abalone from Ezo, Liver Sauce and Black Truffle, to represent the premium ingredient of abalone, which is also considered the king of the shellfish by many due to its deep and rich flavours. To cleanse your palate, Chef Sakamoto presents special tomatoes flown in from Kochi Prefecture, with eight degrees of sugar content before savouring the star of the dish.

Entering the main course, Chef Sakamoto features one the world’s finest beef – the Kagoshima Beef through his own creation of Kagoshima Beef Sirloin in Sukiyaki style. The premium produce is imported from Kagoshima Prefecture with principal characteristics being its tenderness and a full-bodied flavour, together with a well-balanced fat marbling throughout the muscle fibres. Complete the experience by enjoying the Autumn Mushrooms and Chestnut Rice and a selectio of handcrafted desserts.

This year’s When Jakarta Meets Japan will also feature five key events, such as afternoon tea in Peacock Lounge, a party in K22 Bar, bar takeover in Barong Bar and a buffet dinner at Spectrum.
