
This May, The Langham, Jakarta will host a rare and distinguished four-day culinary collaboration between its own T’ang Court and Hong Kong’s acclaimed Ming Court. From 22 to 25 May 2025, diners are invited to savour an artful union of two masterful kitchens: Executive Chinese Chef Chong Kooi Sam of T’ang Court, and Chef Tsang Chiu King, the venerable figure behind Ming Court’s ascent to its prestigious one Michelin star.
Chef King is a titan of Cantonese cuisine. With over five decades of experience, he was the inaugural culinary director at Ming Court in Wanchai, guiding the restaurant to Michelin recognition. His journey spans continents, from Switzerland to the dynamic kitchens of mainland China and Australia. Yet his grounding remains firmly in the culinary heritage of Guangdong, with dishes echoing a philosophy of elegance without excess, of mastery without pretension.


The set menu, priced from IDR 2,088,000++ per person, is an intricate showcase of texture, technique, and time-honoured ingredients. It opens with a Shredded Duck Spring Roll, with crisp shell yielding to a fragrant, tender filling elevated by the unorthodox richness of Frozen Foie Gras. Next comes the Wok-Fried Lobster, lacquered in whisky and speckled with preserved radish, this is a dish that teeters between smokiness and umami.
Arguably the menu’s pièce de résistance is the Marinated Beef Short Ribs, delicately paired with Black Truffle and Honey Sauce. Here, tradition embraces innovation; the truffle’s earthy aroma lifts the richness of the beef, while the honey draws out a subtle, unexpected sweetness.
Chef Sam, a rising luminary in The Langham’s Chinese Star Chef Academy, is no stranger to finesse. Under the mentorship of Chef King, he brings precision and character to each plate. This Four-Hands dining experience is a reflection of their shared commitment to the culinary principles of balance, and respect for heritage.
