Hotel Tentrem Jakarta is taking that idea across three of its dining venues with a new Spirit-Free Cocktail Collection, bringing Indonesian ingredients, Italian references and contemporary mixology into drinks designed for guests who want the ritual and complexity of a cocktail without the spirits.
The collection is now available at Kayu Manis, Canella and POPULICO Restaurant, with each venue approaching alcohol-free drinking through its own culinary identity. Rather than building one hotel-wide menu, Tentrem has developed separate selections that sit alongside the food and atmosphere of each restaurant.
At Kayu Manis Restaurant, the menu stays close to Indonesian flavours. Ketan Ireng, Navata, Sagara, Bongkot Asri 2.0 and Pandawa Brana are inspired by local ingredients, spices and familiar flavour references, then transform them into contemporary cocktails. Canella takes a different route. Its Italian character runs through Rubino Rosso, Stella Ala Canella 2.0, Caffè Formaggio and Luna Rosa, with Indonesian touches appearing alongside European flavour references, this way diners can have another pairing option for an Italian meal without automatically reaching for wine or a conventional aperitivo.
At POPULICO, the names become noticeably more playful. Theatre of Coffee, Kembang Setaman, Space & Oolong, Fun Spitzer and Flower Lemonade bring coffee, tea, florals and fruit into a brighter collection intended to match the restaurant’s more casual, urban setting.
With no spirits to lean on, the drinks have to find their character elsewhere, and that is where the menu gets interesting. Coffee, oolong, florals, spices and Indonesian ingredients take the lead, while acidity, bitterness, aroma and texture keep each glass feeling properly composed. Names such as Ketan Ireng, Kembang Setaman and Bongkot Asri 2.0 also give the collection a distinctly local accent before the first sip even arrives.
