
One of Bali’s most celebrated restaurants is heading to Jakarta this August as KAUM Bali teams up with COPA at 25hours Hotel Jakarta for a weekend of fire-led cooking, regional Indonesian flavours and inventive cocktails.
The collaboration begins with dinner on Friday and Saturday, 7–8 August 2026, before continuing with a special National Day Brunch on Sunday, 9 August. Led by Chef Maxie Millian of KAUM Bali and Chef Matias Mardones of COPA, the menu brings two approaches to Indonesian cuisine into focus, with KAUM’s focus on regional traditions meeting COPA’s signature open-fire cooking.
The menu highlights regional Indonesian flavours through traditional recipes and cooking techniques. Expect ingredients shaped by charcoal grilling, wood fire and fermentation with each dish reflecting the chefs’ own experiences while staying connected to the flavours and methods that define Indonesia’s diverse cuisine.


For Chef Maxie, the collaboration follows KAUM’s continued exploration of Indonesia’s regional recipes, ingredients and traditions. As part of the Potato Head family, the restaurant has become known for bringing these stories to the table through techniques such as bamboo grilling, pit roasting and hand-ground spice pastes. Its menu draws from communities across the archipelago, highlighting the variety of Indonesia’s food culture.
Chef Matias brings a different background to the collaboration. Originally from Chile, he has cooked across Hong Kong, Manila, Macau, Korea and Jakarta, with each destination influencing the way he works with ingredients. At COPA, his cooking combines Latin American influences with his appreciation for Indonesian produce and flavours.
The experience continues upstairs at Oddbird Bar, where KAUM Bali’s mixologist will take over the cocktail menu with drinks inspired by Indonesian botanicals and regional flavours. The selection complements the dining experience, offering another way to explore local ingredients through a different format.
With limited dinner seatings and a special Sunday brunch, the collaboration offers guests a chance to see how two chefs with different backgrounds approach Indonesia’s culinary traditions.
