To mark its opening, Noesaka collaborates with William Wongso, Indonesia’s most respected culinary figure, to present Jejak Rasa. This special menu reflects Wongso’s lifelong journey across the archipelago, expressed through flavours that carry memories of places visited and traditions preserved. “Through this collaboration, Indonesian cuisine — with its rich stories and depth of flavour — will become more widely known and appreciated, and enjoyed within the context of a modern lifestyle,” Wongso shared.

Diners can savour Padang’s rendang beef cheek, tender and rich with spice, or enjoy the citrus‑bright freshness of Ternate’s Tuna gohu. Gorontalo’s Sop Binte Biluhuta—a sweet corn soup comforts with shrimp and basil, while Aceh’s Udang Tangkap—crispy prawns bring bold character with curry leaves. East Java contributes smoky Pepes Shisamo, while Surabaya’s Red Fried Rice and Padang’s Rendang Beef Cheek add vibrant flavour to the journey. To finish, Jongkong and Surabi Pandan Durian remind diners that Indonesian desserts carry just as much heritage as the savoury plates.
