For three evenings only, Dining Room at Park Hyatt Jakarta places Indonesian cuisine at the heart of the experience through a special collaboration with celebrated chef Norman Ismail. As part of the ongoing “A Nusantara Story” series, the partnership invites diners to travel across the archipelago through a menu that revisits regional flavours.

Running on 19 June, 26 June, and 3 July 2026, the menu highlights regional flavours in a format suited to today’s dining scene. The collaboration aligns closely with the philosophy behind “A Nusantara Story”, a dining concept created to celebrate Indonesia’s extraordinary culinary diversity. Together, Chef Norman and the Park Hyatt Jakarta culinary team present a menu that honours regional traditions while showcasing the creativity and craftsmanship that continue to shape the country’s evolving food scene.

Chef Norman Ismail sees the collaboration as a celebration of the stories embedded within Indonesian cooking. “Many of our traditional dishes are connected to a particular place, memory, or community,” he says. “This menu draws from those influences while presenting them in a way that feels relevant to today’s dining scene.”

For Denis Hermawan, Chef de Cuisine of Park Hyatt Jakarta, the partnership reflects the core idea behind “A Nusantara Story”, “Indonesia’s culinary landscape is incredibly diverse, and collaborations like this allow us to showcase that richness from different perspectives,” he explains. “At the same time, it’s important that we stay connected to the traditions and ingredients that give these dishes their identity.”

Each dish offers a different expression of Indonesia’s rich culinary heritage, from Beef Tuturuga, where sous vide beef tenderloin is paired with pandan and kemangi-infused jus, cheddar kremesan, potato pavé, and chilli oil, to Tuna Lawa Baleh, which combines tuna crudo with bilimbi, caramelised pineapple, pomelo, green chilli, and torch ginger oil. Elsewhere, Bakakak Parahyangan presents free-range chicken alongside kari sauce, crunchy potato cake, sambal bawang, and pickled lobak, while Andaliman Octopus layers smoky grilled octopus with kalio reduction, cassava, and aromatic North Sumatran spices.

Served as part of the “A Nusantara Story” buffet experience, the limited-time collaboration offers a rare chance to discover flavours from across the archipelago in an elegant setting high above the city, where every dish carries a story of place, culture, and tradition.
