Bringing with him a ‘Slice of Italy’, Chef Marco Miglioli from Amalfi Ristorante is set to take over the kitchen of Collage All Day Dining, Pullman Jakarta Central Park from 1 to 30 September, where he’ll introduce to diners the culinary traditions of his homeland.

Indonesia has no Michelin-starred restaurants, and so Michelin-star chefs are the closest we’ll get to experiencing such culinary stardom! Chef Marco Miglioli earned his stars in 2019, having had an illustrious, 17-year career working in restaurants around the world. He then opened his Jakarta restaurant, Amalfi Ristorante & Bar, where he presents colourful and creative reimaginings of Mediterranean dishes, inspired by the Amalfi Coast and his own Italian roots.

From 1-30 September 2023, Chef Marco will bring present signature dishes through his takeover of Collage All Day Dining. His takeover will include several dining experiences including an A La Carte Menu, Special Set Menu and Special Buffet.

Some of the chef’s signature offerings include: Carpaccio di Manzo, a delicate and exquisite helping of thinly sliced beef garnished with Chef Marco’s own dressings; Ravioli del Plin, a gorgeously creamy pasta of his own making; a seafood delight with Spaghetti Amalfi Mare e Monti; and also two iterations of the classic Italian dessert, tiramisu, Tiramisu Amalfi and Grandmother-Style Tiramisu.

On top of that, Collage All Day Dining’s Executive Chef Ridwan Rosyadi is also preparing some special dishes just for the takeover, featuring on the a la carte and buffet selection. These include 72-hour Sous Vide New Zealand Short Ribs, a bucket of Seafood on Ice, Lamian and, perhaps most exciting, a collaboration dish with Chef Marco: A Rendang Infusion Lasanga, brings Indonesia and Italy together in a culinary crossover.

Dive deeper into this Italian experience through curated cocktails, created by the restaurant’s mixologist, Khasan Putra. Just for Slice of Italy he’ll be serving up Italian concoctions, such as Averna Amaro Sour and Aperol Spritz; also, a selection of Italian wines, from DOCG to Prosecco, will be available to complement meals.
