Experience the Colors of Japan at Park Hyatt Jakarta & Les Vergers Boiron with Julien Perrinet

Following last year’s successful collaboration with 2024 World Pastry Champion Otto Tay, Park Hyatt Jakarta reunited with Les Vergers Boiron for this year’s edition from 22-23 May 2025 to repeat the feat. Executive Pastry Chef for Hyatt Asia Pacific and official Brand Ambassador of Boiron, Julien Perrinet, presents a signature concept titled “The Colors of Japan”, a pastry experience inspired by a country where Chef Julien has built both a professional legacy and personal affinity.

Guests at the Conservatory, Level 23, starting from 2.30 PM onwards, were treated to a three-course Goutier Fruité presentation featuring ten items. Including six signature pastries by Julien Perrinet, each creation represents a color and evokes the essence of a Japanese season using premium ingredients, particularly fruit purées from Les Vergers Boiron. They reflect a balance of flavor, texture, and temperature, showcasing Chef Julien’s understanding of pastry artistry and his use of seasonal expression.

Green, comprised of matcha cream, kiwi gel, green apple and kiwi granita, was inspired by the freshness of matcha fields and the renewal of early spring. Purple evokes deep berry notes that reflect the richness of Japan’s autumn foliage, with cassis-strawberry, mascarpone cream and cassis madeleine sponge. Yellow makes itself out of mango, passion fruit, pineapple choux pastry to be bright and sunny, a tribute to the warmth of tropical summer.

Pink, containing raspberry, lychee and pink guava velvet cake, tastes delicate and floral, like sakura petals in full bloom. White involves coconut crémeux, coconut crumble and yuzu: clean and refreshing, reminiscent of a snowy Kyoto morning. Orange is vibrant and zesty, the blood orange sorbet evoking a golden-orange sky at dusk

Being no stranger to Park Hyatt Jakarta, Chef Julien Perrinet joined hands with in-house Pastry Chef Ali Saleh during a previous visit for a four-hands afternoon tea. His return for the two-day collaboration event underscores Park Hyatt Jakarta’s positioning as a hub for top dining experiences, refined craftsmanship, culinary excellence and its ongoing partnership with Hyatt’s regional pastry leadership.
