Peruvian cuisine has become more popular recently and is often hailed as the next big thing in global food trends. It can best be described as a melting pot of different cultures with a lot of influences from Europe, Asia and Africa, using a wide array of amazing ingredients.

During the Peruvian food festival, Chef Eduardo serves a great selection of appetizers, entrees and desserts. To begin the feast, guests can savour cholclo con queso, vainas salteadas, potato coctel, chicken skewer and beef heart skewer. The beef heart skewer is a much-loved Peruvian hawker food and popular late night dish, made from marinated meat in spices and smoky chilies.

Aji de gallina, a traditional Peruvian main course is on offer alongside other favourites such as lomo saltado, speguetty huancaina and seco norteno. For Peruvians, aji de gallina is a dish close to their heart as it is often referred to as “grandma’s specialty”.

As a sweet ending to the Peruvian culinary journey, suspiro de limena is a must-try item. Carrying the capital’s name, suspiro de limena translates as “sigh of Lima” and is a combination of dulce de leche or caramelized sugar and smooth meringue.

Chef Eduardo started his career in 2007 and brought Peruvian cuisine to Hong Kong in 2013 as the Executive Chef of Mayta Restaurant. Prior to his arrival at JW Marriott Hotel Jakarta, he was appointed as Corporate Chef of Mayta Restaurant and in charge of introducing a new concept of Peruvian cuisine in Asia and United Emirates Arab. With more than ten years of experience in the culinary industry, Chef Eduardo believes that a chef must cook by combining tradition and experience.
