For this Ramadan, it’s quite special, we are changing our culinary concept, which is more Nusantara, so it covers larger Indonesian areas, such as those from Kalimantan, Sumatra, Sulawesi, and we also bring together Italian and Middle Eastern flavours,” Chef Andy explained.

For appetisers, guests can indulge themselves with a Maluku specialty cuisine, Tuna Gahu (raw-fresh tuna made with lime juice and Indonesian herb leaves), Pecel Surabaya (mixed steamed vegetables, bean cake, papaya blossom served with peanut sauce), and Tahu Telur (boiled egg, tofu, and peanut petis/fermented fish or shrimp sauce).

For indulgences with a more international twist, Chef Andy has created exceptional main courses, such as Lamb Shank Kebuli (braised lamb shank served with Jakarta-style kebuli rice, onion slaw, and sambal matah), Beef Kalio (braised beef in heavy coconut curry), Sate Ayam (chicken skewer with peanut sauce), Mushroom Ravioli (homemade ravioli filled with morel mushroom and anchovy with butter cream sauce), and Rigatoni Pasta (homemade rigatoni with tomato sauce, basil, and Kalamata olives). Iftar at the Dining Room is priced at IDR 688,000++ per person.

Inspired by its afternoon tea concept at the tranquil and elegant setting of Conservatory, guests can embrace the spirit of Ramadan with an exquisite afternoon tea set, featuring an array of sweets and savouries including Pistachio Baklava, Date Scone, Maamoul Tart, Halawat Aljubn, and Qamar al-Din. Priced at IDR 325,000++ per person or IDR 640,000++ for two persons.
