Bakerman has officially opened its doors at Plaza Indonesia, marking a strategic expansion for the Jakarta-based artisan bakehouse and introducing a new open-concept format designed to place craft and process in clear view. The launch, which took place on 4 December 2025, signals a recalibration of how Bakerman meets its audience, closer, more accessible, and tuned to today’s appetite for experience and flavour. 

After establishing a strong footprint across lifestyle-driven districts such as Ashta District 8, Central Market PIK, and Pondok Indah Mall 3, Plaza Indonesia offered a setting that aligned with the brand’s next phase, which is one that sits between high footfall and curated luxury.

The Plaza Indonesia outlet introduces a more open and approachable retail design, a departure from Bakerman’s earlier formats. The expanded pastry and bakery display is arranged to invite closer inspection, allowing guests to engage directly with texture, colour, and aroma before making a choice. It reflects the brand’s underlying belief that food should feel welcoming before it ever reaches the table.

The launch was marked by the debut of the New Croissant Collection, led by a Plaza Indonesia exclusive series that spans sweet, savoury, and cake selections. At the centre of the line-up sits the Croissant Salt Bread, a hybrid that brings together the laminated richness of croissant pastry with the soft savoury profile of salt bread. 

Sweet offerings include Orange Custard, Choc Croissant & Butter Pudding, Honey Butter Croissant, Christmas Croissant, and Lychee Rose Raspberries. For savoury preferences, the Bagel–Salt Bread extends the hybrid concept further. Dessert additions such as the Basque Cheese Cake and the Flourless Cake situate Bakerman firmly beyond the bakery counter, but also as a place for lingering, not just takeaway.

Classic items remain firmly in place. Croissant Egg Tart, Almond Croissant, and Croffle continue to anchor the menu, maintaining continuity for long-time patrons while offering a dependable entry point for newcomers. Beyond pastries, the Plaza Indonesia outlet broadens its daytime and evening appeal through a selection of savoury signature dishes. The Lamb Shank Tongseng draws on Indonesian flavour traditions, while the Truffle Wagyu Beef caters to those seeking a richer plate, and Tagliatelle Oxtail Ragout introduces a hearty pasta option that signals Bakerman’s shift towards all-day dining. 

The beverage programme was also expanded with the introduction of Bakerman’s Mont Blanc Coffee as the new hero drink. Built on cold brew and Earl Grey syrup, the drink layers bergamot, citrus, and soft creaminess with a measured bitter-sweet finish. Fresh orange zest adds brightness without tipping into sharpness. Alongside this, the Manual Brew – Karo Coffee Series showcases Indonesian speciality coffee through three flavour profiles: Karo Blueberry, Karo Strawberry, and Karo Melon, served either hot or in Japanese-style iced format.

The choice of Plaza Indonesia itself carries weight. As one of the capital’s longstanding luxury lifestyle destinations, the mall is associated with ageless retail appeal and carefully curated experiences. The pairing is deliberate, a modern bakehouse entering a space known for shaping taste.
