Buen Apetito becomes a toast to cultural connection and flavour at ARYADUTA Menteng as the hotel curates a dining experience that pays tribute to the Italian-Argentinian culinary through its collaboration with renowned Chef Francisco Sanchez Alcazar.
To many Jakartans who aren’t familiar with Argentina’s demographic, must know that the country shares deep Italian roots thanks to the waves of immigration from Genoa, Naples and Calabria, and long it has shaped Argentinian food culture. From pasta Sundays to Fernet rituals, the marriage of Mediterranean soul and South American warmth will grace the kitchen of Ambiente Restaurant in two tasting menu options.

3-Course Tasting Menu
Argentinian Soul, Italian Finesse
The first is a three-course meal for those seeking a concise but no less indulgent experience. A refined comfort and flavour come in the form of an Empanada Caprese as its starter. It is a delicate, baked empanada filled with roasted tomatoes, mozzarella, basil, and oregano. Served with a side of tomato confit and basil oil, this dish is an Italian simplicity in an Argentinian wrapper.
The star of the meal is Raviolón de Asado con Salsa de Tomate Ahumada, a large handmade raviolo filled with slow-cooked Argentinian short rib (asado), finished with smoked tomato and red wine sauce, topped with gremolata breadcrumbs for brightness and texture. Closing with a sweet note in the form of Budino di Dulce de Leche. This silky, house-made flan made with Argentina’s beloved dulce de leche, topped with whipped cream, almond praline, dark chocolate shards, and meringue crumble, is a comfort food with elevated flavour profile.
5- Course Tasting Menu & Wine Pairing
A Journey Through Italian Argentinian Heritage
The ultimate indulgence lies in the 5-course tasting menu. This set meal is a flavour-packed journey that showcases how passed down techniques and recipes that have survived generations brings the best out of two food cultures.
Taking off with a light bite, guests can enjoy Mini Fugazzetta Croccante, Argentina’s answer to Italy’s focaccia. This amuse-bourche is a cheesy indulgence topped with caramelised onions and oregano, best paired with lightly oaked Chardonnay to set a bright, aromatic tone for the meal.
Empanada di Cordero con Aioli di Limón y Menta opens the meal with its golden, crisp empanada filled with slow-braised lamb, herbs, and potato. Served with a zingy lemon-mint aioli and pickled red onion for contrast, this appetiser is best enjoyed with a light Malbec, this dish captures the rustic comfort of Argentinian street food with fine-dining finesse.
Pasta is a staple in both Italian and Argentinian dishes, and this Ricotta & Spinach Stuffed Pappardelle with Sage Butter is a comforting delight in every spoonful. Savour its hand-rolled pappardelle enveloping a creamy ricotta-spinach filling, bathed in nutty brown butter with crispy pancetta (optional), and finished with parmesan. Pair it with a classic Pinot Grigio for a crisp, cleansing balance.
The main course of this meal is the Entraña alla Fiorentina. A perfectly grilled skirt steak, elevated with chimichurri butter and red wine jus, accompanied by velvety potato gratin and charred asparagus. Malbec Reserva or Cabernet Sauvignon brings depth and boldness to this richly layered dish. And finish it off with Budino di Dulce de Leche for a sweet ending.
And if all of these aren’t enough, the Live Chef Pasta Experience adds a theatrical twist, where fresh pasta is rolled and shaped before their eyes, then cooked à la minute. Choose from sauces like sage butter or slow-braised tomato ragù.
To round off the season, Ambiente Ristorante invites guests to a lavish Easter buffet. Expect gourmet appetisers, traditional roasts, vibrant salads, and decadent desserts—all served in a warm, elegant setting with live entertainment and five-star service.
