Mandarin Oriental Jakarta’s Lyon restaurant invites guests to an exclusive Four Hands Dinner in collaboration with AMUZ Gourmet, presenting a refined culinary evening, paired with exquisite wines from Maison Louis Latour and led by two of Jakarta’s most accomplished chefs: Dennis Hermawan of Lyon and Gilles Marx of AMUZ.

Set to be held on Friday, 16 May 2025, the evening will begin with a trio of Lyon’s amuse-bouche: Brie & Bresaola, and Mushroom Vol-au-Vent, accompanied by a Louis Latour Ardeche Chardonnay 2020 served in Kir Style, starting with a sophisticated tone for the courses to follow. Diners are then introduced to Chef Gilles’ elegant starter, Le Crabe des Neiges, a chilled Alaskan snow crab salad served with organic rocket, compressed watermelon, mango salsa, and green apple jelly, complemented by Louis Latour Macon Villages Chameroy 2022.

Chef Gilles, a native of Alsace, France, brings a wealth of experience drawn from Michelin-starred kitchens across Europe, Australia, and Southeast Asia. His dedication to French culinary tradition is reflected in the next two courses: Le Filet de Turbot, a pan-seared Atlantic turbot fillet with roasted artichokes, watercress purée, and sea urchin butter, paired with Louis Latour Chablis 2022; followed by Le Foie Gras de Canard Poêlé, a pan-seared duck foie gras accompanied by cinnamon-roasted kabocha squash, pumpkin seeds, and gastric jus, matched with Louis Latour Pouilly-Fuissé 2022. Since founding AMUZ Gourmet in 2010, Chef Gilles has become a leading figure in Jakarta’s fine dining scene, with his restaurant earning continued acclaim for its refined execution and exceptional quality.

A refreshing palate cleanser of lemon sorbet with mint jelly will offer a pause before Chef Dennis Hermawan introduces his course: Le Travers de Bœuf Basse Température. This hearty dish of slow-cooked short ribs is served with carrot textures, persillade, rösti potato, and natural jus, elevated by the rich character of Louis Latour Côte de Beaune Villages 2019.

Chef Dennis has helmed Lyon since 2019, infusing the restaurant with his thoughtful and contemporary take on French cuisine. His leadership has earned Lyon a series of prestigious awards and established the Lyon Saturday Brunch as one of Jakarta’s most celebrated weekend dining experiences.

The evening concludes on a decadent note with Élément de Chocolat, an almond cake served with caviar, cocoa nibs crumble, and mousse, paired with Louis Latour Chassagne-Montrachet Rouge 2021, bringing the collaborative journey to a graceful close.
